I know what you are thinking, HOW can this LUSH looking burger be DIET food? Well, it is IF you use VERY lean minced beef or even better, minced steak. And, of course, you have to DITCH the bread bun on a 5:2 fast day too…….and for those of you with eyes like a hawk, YES the photos DO show a pitta bread, but I took these photo on a NON FAST day as we (hubs and I) both loved these burgers so much, that I made them again, for a feast day! These Luxury Steak Burger with Artichokes and Olivescome in at a VERY lean 290 calories each – including the artichokes and lemon sauce, and that means that they are JUST perfect for a fast day on the 5:2 diet, or for a low points luxury meal on Weight Watchers. Luxury Steak Burger with Artichokes and Olives

I used lean 5% fat minced beef when I made these, sometimes they call the very lean minced beef, minced steak and mincing your own steak would be a good way to get extra lean meat for these burgers too. The lemony sauce with the artichoke hearts and olives is just sublime and the burgers are just bursting with flavour, I LOVE the how the sun-dried tomatoes and capers add a lovely mellow piquancy to them. It really is hard to believe that you are eating diet food! The GREAT news for me is that in my 2nd and 3rd weeks of following the 5:2 diet morediligentlythat I normally do, I have lost 5lbs! And, that isincludingthe week that I had thesegorgeousburgers as my mainmealtoo.

I had this burger for my second fast day this week, and ended the day on a very smug 496 calories, and ate very well, I thought! This is what I had, that made up my daily calories:

Breakfast: Small peach with zero fat fruit yoghurt = 80 cals

Lunch: Luxury Steak Burger with Artichokes and Olives= 290 cals

Tea: 4 Surimi crab sticks (60g) with salad leaves, 1 tablespoon Hellmans Dijonnaise & splash Tabasco = 100 cals

Daily:75ml milk allowance = 26 cals

TOTAL: 496 calories

I think that if the food that you eat on a fast day FEELS special, than it is so much easier to endure the 24 hours of low calories, and this recipe CERTAINLY tasted gourmet and very luxurious too! Extra lean steak or minced beef is used in these burgers......and the addition of a hot lemon dressing with artichoke hearts and olives lifts these burgers to a luxurious and gourmet level. This burger recipe weighs in at a VERY low 290 calories, which means you CAN have a burger on your fast day!

Ingredients

  • 600g low fat minced beef (maximum fat 10%, or minced lean sirloin/rump steaks)
  • 1 tablespoon capers (drained and finely chopped)
  • 35g sun-dried tomatoes (well drained, finely chopped)
  • 1 tablespoon olive oil
  • 2 teaspoons crushed black peppercorns
  • 400g tinned artichoke hearts in water (well drained )
  • 2 cloves garlic (peeled and crushed)
  • 2 tablespoons fresh parsley (finely chopped)
  • juice of half a lemon
  • 25g black olives (stoned and chopped)

Directions

Step 1 Put the minced beef or minced steak into a mixing bowl and add the capers and sun-dried tomatoes. (You can season with a little salt just before cooking.) Divide into 4 equal portions and press the burgers in the crushed black peppercorns, coating all sides.
Step 2 Cut each artichoke heart into 2 or 4 pieces depending on the size of them. Put the olive oil into a frying pan over a gentle heat and then add the garlic and the artichokes, sauté them for 2 to 3 minutes until the garlic is cooked and the artichokes are heated through; then stir in the lemon juice, parsley and black olives.Remove from the heat, cover and keep warm.
Step 3 Heat up a heavy ridged griddle pan or frying pan, spray with some low-fat spray and then pan-fry the burgers until cooked to taste, 2 to 3 minutes on each side for medium rare and longer for medium and well done.
Step 4 Serve the burgers on individual plates, and then spoon the artichokes in their dressing over the burgers, and garnish with fresh parsley. If not on a diet, pita breads make a great accompaniment.
