Strawberry Cake Mix Cookies are the ultimate cheater cookie. There, I said it! I have long been making these chocolate cake mix cookies, but these are a totally different flavor and are so pretty I think it deserves its own post.

These are super easy to mix together, and bake up in under 15 minutes! You can clean up while they bake, and cool if you don’t have other people to coerce into doing it for you.

This cake mix cookie recipe gives you cookies that are soft, chewy and with that yummy strawberry flavor.

These are awesome any time of year, but these are also good for Valentine’s Day!

These cookies will be super soft when coming out of the oven. Be sure to let them cool before trying to remove them from the cookie sheet.

How to store baked cookies

Store in a covered container at room temperature for up to 5 days.

Variations

You can make lemon cake mix cookies, by simply swapping out the cake mix flavor, all other ingredients remain the same.

Freezing instructions

The cookie dough balls can also be frozen before baking. Scoop onto a baking tray and freeze until solid. Store in a zip lock bag and pull out as many as you need that day. Bake as usual, don’t thaw – for an extra 4-5 minutes from frozen.

  • Strawberry Cake Mix. Any brand will do, I use Duncan Hines or Pillsbury with no difference between the two.
  • Eggs. You’ll need 2 eggs.
  • Vegetable oil.
  • White chocolate chips. These are optional. I mix them into the batter, but also keep a few to press into the cookies as they come out of the oven so they look pretty. You can also use milk or dark chocolate chips, or use m&m candies if you prefer.

Get prepped

Preheat the oven to 350 degrees f, and line two baking sheets with parchment paper or a silpat (silicone baking mat).

Make the cookie dough

Add the cake mix to a large bowl.

In a smaller bowl, whisk the eggs together, then add the oil and whisk until well combined.

Add the egg/oil mixture to the cake mix and combine until a dough forms. The dough will be soft.

Fold in the white chocolate chips, leaving a few for decorating the cookies after baking.

Scoop

Using a small cookie scoop, scoop the batter from the mixing bowl onto the prepared baking sheets, spacing them evenly apart.

Bake

Bake in the preheated oven for 8-10 minutes. The edges will be lightly brown, and the cookies will be soft when you remove them.

Add the extra chocolate chips to the tops of the cookies, pressing them into the cookies lightly.

Cool

Let the cookies cool on the baking sheet for 5 minutes, then remove to wire racks to cool completely.

Ingredients

  • 15.25 oz strawberry cake mix (1 box)
  • 1/3 cup vegetable oil

  • 1 cup white chocolate chips (optional)

Directions
