There is nothing like the smell of baking banana bread!

Especially when then end result is as delicious as this recipe.

Banana bread was something I used to make out of necessity at my house. When we first got married, my husband would buy big bunches of bananas and then pretend like he was going to eat them…so of course we always had big bunches of black bananas on the counter. After a while I did wise up, because I did (finally) figure out he was just doing that so I’d make my banana bread recipe for him. It worked out, as I had the perfect excuse to refine my banana bread recipe over all those years–19 if you’re counting.

Banana bread is something I also like to make up for little gifts. The craft stores make it so easy now with all the paper baking dishes, a cello bags, and a personalized tags they’ve made available. The little personalized touches make these edible presents a thoughtful gift worth receiving.

This recipe is a little different–it’s a banana bread recipe with sour milk. Don’t worry, I’ll show you just how to make sour milk for banana bread without having to truly spoil anything.

So lets get baking–click on to the next page!

My husband loves banana bread. I saved this recipe many years ago. I’ve made this recipe and I’ve tried some others over the years but I always come back to this one. It’s just like we like it. I really think this is the The Best Banana Bread!

Thank you so much for the kind words!! I love that it's your go-to as well. My husband and I just celebrated 24 years (!) and can't believe we've been making this same recipe that long! It's so nice to hear so many others get the same joy out of this banana bread recipe. :)

Banana Bread looks so good.

I only have oat milk on hand. Would that work for this recipe? I imagine oat milk doesn’t “sour” the same as dairy milk.

Thank you for sharing your recipes. This one looks delicious. Can you substitute sour cream for the buttermilk?

@Paula Biggs, @Linda Harbison I have been subbing sour cream nearly every time I've made this recipe and it seems to work great. The recipe my mom had growing up said "buttermilk or sour cream" and I've never seemed to have an issue.

I've never tried with sour cream in this particular recipe! I don't know what the reduction in liquid would do to the moisture of the bread, but sounds like a fun experiment :)

I make banana bread all the time. This one was a hit! So moist and delicious! I use lemon juice to sour my milk, but that is the only thing I changed. Delicious!

So glad it was a hit for you! I like that there are many different ways to sour the milk--I'm always about using what I have on hand to cook and bake!

FAQs

Why is my banana bread dense and not fluffy? ›

You Over-Mix the Batter

For soft and tender banana bread, gently stir the wet ingredients into the dry — don't overmix! The more you stir, the more gluten will develop. The result will be a tough, rubbery banana bread. Simply stir until moist, and then do no more.

Why did my banana bread flop? ›

The banana bread will not rise much during baking and may sink slightly in the centre on cooling, but should not collapse competely. If it did collapse then it is likely that the banana bread had not quite baked fully (and in light of the ingredient change may have needed a slightly longer baking time).

How can I make my bread fluffier instead of dense? ›

Add Sugar

Adding sugar weakens the gluten structure, absorbs water, and eventually makes the bread lighter and softer. As a result, sugar improves the bread's taste, structure and texture. Yeast also eats up sugar to produce carbon dioxide, which raises the dough and makes bread fluffy.

Can you put too much banana in banana bread? ›

Unfortunately, this isn't always the case with bananas (per Allrecipes). If you add more bananas than the recipe calls for, you could be left with a loaf that you probably won't want to eat or serve to anyone else. However, you could also get exactly what you wanted — a more flavorful, still edible loaf (via Insider).

Why does my banana bread not taste like banana? ›

If your banana bread doesn't taste like bananas, it could be that you didn't use bananas that were ripe enough. The flavour of a ripe banana is quite different than a green banana. Choose the ripest bananas possible. Some bakers recommend using bananas that are on the verge of over-ripe with completely black peels.

Do oven ripened bananas taste the same? ›

The texture of a baked banana may be a bit softer than that of one naturally ripened but the taste and caramelized sweetness will be amazing. Preheat your oven to 300ºF, as a low and slow oven ensures the interior of the banana bakes before the outside gets too dark and mushy.

Why is my banana bread dense and gummy? ›

Banana bread is made with a very wet batter. It's important to use a tester to make sure it's fully baked. Cutting it before it is completely cooled can lead to the gummy texture. Cooling the bread to room temperature allow us the starch that gels during baking to set again.

Why does the middle of my banana bread not cook? ›

If your oven has not reached the correct baking temperature before the banana bread is placed in the oven, the banana bread will be undercooked and more likely to sink. I like to use a hanging oven thermometer placed inside my oven to see if the oven has reached the correct temperature.

Why is my banana bread like a brick? ›

Your bananas here were too dry, maybe because they were not so ripe, and they dried out the rest of the batter, making it dense and heavy. In dense and heavy batter, it's hard for your baking powder to make air bubbles (that's why you got a brick).

How long to let banana bread rest? ›

Let it cool for 10 minutes — this helps the loaf solidify and makes it easier to remove from the pan. Remove from pan and cool another 10 minutes. Grasping the parchment paper sling, lift the loaf out of the pan and place on the cooling rack. Cool for another 10 minutes before slicing.

Can you speed up ripening bananas for banana bread? ›

Try speed-ripening bananas in the oven. Preheat the oven to 300 degrees F (150 degrees C) and line a baking sheet with silicone or parchment. (The bananas may leak a little during baking.) Place unpeeled bananas on the baking sheet leaving some space between them, and bake for about half an hour.

How do you know when banana bread is done without a thermometer? ›

Check the doneness of the bread: Use a toothpick or cake tester to check if the bread is undercooked. Insert the tester into the center of the bread and see if it comes out clean. If it does not come out clean, the bread is not yet fully cooked.

Why is my banana bread heavy and dense? ›

As tempting as it may be to dump all those overripe bananas into your batter, four medium-sized bananas are typically the most that a single loaf of banana bread can accommodate — any more and you're likely looking at a loaf that's going to be dense and heavy rather than soft and moist in the middle.

Why does my banana bread get dense? ›

An overmixed banana bread batter will result in a dense, rubbery loaf. As you're prepping your batter, heed the advice of "stir until just moistened" and "no more than 10 seconds."

Why is my banana cake so dense? ›

Don't Over-Mix

That trapped air expands then deflates in the oven. A deflated cake is a dense cake! Only mix the wet and dry ingredients together JUST until combined. I usually run a whisk or spatula through the batter a couple times at the very end to ensure there are no large lumps at the bottom of the bowl.
